Another hearty meal with lots of flavor! Find me someone who doesn’t like a good meatloaf.
Can be served with salads, GFCF bread, or roast veggies.
Ingredients:
Meatloaf
- 1 lb ground beef, lean
- 1 lb lean sausage
- 1 cup GFCF fine bread crumbs
- 2 medium onions
- 1 1/2 Tbsp curry powder
- 1/2 cup water
- 1 Tbsp fresh parsley
- 1 egg
- 1 clove of garlic
- 1/2 cup GFCF milk
BBQ Sauce
- 1 onion
- 1/3 cup Water
- 1/3 cup GFCF Ketchup
- 1/3 cup Dry red wine OR beef stock
- 1/4 cup Worcestershire sauce
- 2 Tbsp vinegar or orange/lime juice
- *Optional, 1 Tbsp Instant coffee
- 1/4 cup brown sugar
- 1 oz GFCF margarine
- 2 tsp lemon juice
Preparation:
Meatloaf:
- Preheat oven to 375F
- Finely chop the onions, parsley, and garlic cloves
- Beat the 1 egg
- Take sausage meat out of their casings
- Into a large bowl, add ground meats, bread crumbs, onions, salt, pepper, garlic, parsley, curry and egg in a large bowl
- Mix well
- In a separate small bowl, mix the milk and water
- Add this to the meat mixing bowl, but a little at a time until your mixture is smooth yet firm
- Grease a baking pan and add your meatloaf mixture to it
- Bake for 30 minutes at 375F
BBQ Sauce:
- Sauté onions until golden
- Add everything else
- Slowly bring it to a boil, then reduce heat to a simmer for 10-15 min
- After pulling the meatloaf out of the oven after 30 min, pour half of the sauce over the meat
- Spread the sauce around the surface
- Throw the meatloaf back into the oven for another 45 min, still at 375F
- Baste often with the sauce, saving some to serve later
- After the 45 min, cut the meatloaf into thick slices to serve, with the remaining sauce

that addition of coffee sounds really interesting though
some chefs marinate steaks with coffee actually
does that…..work? i mean coffee and steak
sure does. I think it’s better off a grill though. or better yet, smoked
