Bacon Potato Soup

Ever have extra ingredients in the fridge and pantry? For me, it’s always some bacon and potatoes. And you can reliably make a quick and tasty soup out of it!
This can even be done in the microwave! But of course, you can always stew it in a pot.

Ingredients:

  • 4 cups potatoes
  • 12 oz bacon or 6 slices
  • 1 onion
  • 5 Tbsp GFCF margarine
  • 1 cup celery
  • 1 cup chicken broth
  • 1 carrot
  • 2 cups GFCF Milk alternative

Preparation:

  • Crisp and crumble bacon
  • Chop onion and celery
  • Dice potatoes
  • Slice carrot
  • In a casserole dish, add everything except the milk
  • Cover loosely
  • Microwave on high for 13-15 min or until potatoes are tender, stirring once
  • Stir in milk, salt and pepper
  • Cover again
  • Microwave on high for another 8 min
  • With the same timing, you can simmer this in a pot on your stove top!

  • SF – soy  free
  • EF – egg free
