Ever have extra ingredients in the fridge and pantry? For me, it’s always some bacon and potatoes. And you can reliably make a quick and tasty soup out of it!
This can even be done in the microwave! But of course, you can always stew it in a pot.
Ingredients:
- 4 cups potatoes
- 12 oz bacon or 6 slices
- 1 onion
- 5 Tbsp GFCF margarine
- 1 cup celery
- 1 cup chicken broth
- 1 carrot
- 2 cups GFCF Milk alternative
Preparation:
- Crisp and crumble bacon
- Chop onion and celery
- Dice potatoes
- Slice carrot
- In a casserole dish, add everything except the milk
- Cover loosely
- Microwave on high for 13-15 min or until potatoes are tender, stirring once
- Stir in milk, salt and pepper
- Cover again
- Microwave on high for another 8 min
- With the same timing, you can simmer this in a pot on your stove top!
