Ingredients:
- 1 cup muscovado sugar
- 3/4 cup apple or pear sauce
- 2 Tbsp. ground flax seeds
- 1/2 cup white rice flour
- 1/2 tsp. sea salt
- 1tsp. GFCF vanilla
- 1tsp. cinnamon
- 1/2 cup egg substitute
- 1/2 cup crushed pineapple in juice, drained
- 1 cup tapioca, potato, other GFCF flour
- 1tsp. GFCF baking powder
- 1 cup shredded carrots
Preparation:
- Preheat your oven to 350 degrees
- Coat a loaf pan with vegetable spray, then dust the pan with your flour substitute
- Mix sugar, egg substitute and fruit sauce in a bowl
- Combine the dry ingredients and add to the fruit sauce mixture
- Add carrots, pineapple, and vanilla
- Pour the mixture into the pan and bake for 50 minutes
