Carrot Bread

Ingredients:

  • 1 cup muscovado sugar
  • 3/4 cup apple or pear sauce
  • 2 Tbsp. ground flax seeds
  • 1/2 cup white rice flour
  • 1/2 tsp. sea salt
  • 1tsp. GFCF vanilla
  • 1tsp. cinnamon
  • 1/2 cup egg substitute
  • 1/2 cup crushed pineapple in juice, drained
  • 1 cup tapioca, potato, other GFCF flour
  • 1tsp. GFCF baking powder
  • 1 cup shredded carrots

Preparation:

  • Preheat your oven to 350 degrees
  • Coat a loaf pan with vegetable spray, then dust the pan with your flour substitute 
  • Mix sugar, egg substitute and fruit sauce in a bowl
  • Combine the dry ingredients and add to the fruit sauce mixture  
  • Add carrots, pineapple, and vanilla
  • Pour the mixture into the pan and bake for 50 minutes
