These crispy onions are a great side dish or topping for your soups or salads. We use sweet onions here since they are, well, sweeter, in name. They’re also not as strong and stringent as their normal counterparts.
While all onions share nutritional benefits, we will focus on the sweet ones. They have plenty of immune-boosting vitamin C, prebiotic fiber that keeps our gut bacteria happy and healthy, and chromium that helps regulate blood sugar levels.
Ingredients:
- 1 cup GFCF flour
- 2 Tbsp hot Hungarian paprika
- 1 Tbsp Italian herb blend
- 4 sweet onions, sliced paper thin on an electric slicer or vegetable
- Salt to taste
- Deep fryer or high-sided pot to deep fry and oil
Preparation:
- Preheat deep fryer or pot with fair amount of oil to 360 degrees
- Slice onions as thinly as you can
- Mix flour, paprika, and herbs and sift into a large bowl
- Add sliced onions to the mix, then toss and shake well to coat the onions evenly
- In a strainer, shake off excess flour to achieve a thin coat
- Cooking in small batches, submerge coated onions into fryer
- Shake basket for even frying until deep golden
- Repeat until all onions are fried
- Season each batch with salt as it’s removed from the fryer
- Drain on paper towel

it’s worth the effort, great appetizer or side to just about anything
The key to crying when cutting onions is to not form an emotional attachment. Onions are food, not friends.
