My delicious duck breast recipe:
My favorite go-to meal is duck breast. It is delicious, flavorful, and good to pair with any side.
I get my duck breast from Wholefoods Market, their quality is consistent and I get the same result each time. Each packet has 2 duck breasts in it, and I prefer to cook them together as they shrink a lot after cooking.
Score the skin side of the breast, I do 3 shallow cuts, and season each side with garlic salt (I like the Lawry’s garlic salt as it also has herbs in it), pepper, and chili powder. I sprinkle the garlic salt and pepper directly on the duck, and add 2 pinches of chili powder and rub them all in. Leave them to marinate for at least 15 mins.
Heat up a pan with high heat, then put the skin side down on the pan. No need to put oil, as oil will come out of the skin when it is heated. I leave them on high heat for 5 mins on each side, then I put the breasts in the oven at 350 degrees for 15 mins. Save the duck fat!
Once done, I leave them to sit on the counter for at least 5 mins before I cut into them. I like to serve the duck breast on a bed of rice to soak the juice that comes out of the duck when I cut into it.
