Herb Rice

While I love my plain white rice, sometimes we need to change things up. And adding herbs is a tasty way to brighten the flavors and your health.

My favorite herb to use in this dish is thyme. Thyme, like its other mint family relatives, is known to be anti-inflammatory, antimicrobial, and a great antioxidant. With so many compounds, it’s said to help treat things from intestinal infections to skin conditions.

Other than eating thyme, there are a number of uses. It is used in tea, mouthwash, face masks, and nasal sprays. You can also extract essential oils from it for aromatherapy.

Ingredients:

  • 2 tsp olive oil
  • 2 garlic clove
  • 1/2 cup Basmati rice, uncooked
  • 1 cup water
  • 1/4 tsp salt
  • 3 Tbsp thinly sliced green onion tops
  • 1 Tbsp minced fresh basil
  • 2 tsp minced fresh thyme
  • 3 tablespoons GFCF parmesan cheese
  • 1/4 pine nuts

Preparation:

  • Mince garlic, basil, and thyme
  • Thinly slice green onions
  • Saute garlic in oil for 1 min
  • Add rice and mix
  • Add water and salt
  • Bring to a boil
  • Cover then bring down to a simmer for 20 min, liquid should be absorbed
  • Mix in green onions, basil, and thyme
  • Top with cheese and pine nuts
