Here’s another salsa off the beaten path for you guys. This time featuring honeydew!
This green cousin of cantaloupe boasts nutrients for maintaining strong bones, such as folate, vitamin K, and magnesium. It also has other vitamins and minerals to boost your immune system. What I found really interesting was that two of its powerful antioxidants, lutein and zeaxanthin, are shown to support vision and eye health.
Ingredients:
- 2 cups honeydew melon
- 2 stalks celery
- 1 medium to large shallot
- 5 tbsp cilantro
- 2 limes
- Optional, 2 Tbsp olive oil
Preparation:
- Dice honeydew, celery
- Mince shallots
- Chop cilantro
- Zest one lime
- Juice both limes
- Add and mix everything into a bowl
- Add salt & pepper to taste
- Rest in the fridge at least 15 minutes, allowing flavors to blend
