Pressure cookers are a great addition to any kitchen. I recently got one and my roommate had the idea of making this hearty dish his mom used to make at home.
What’s special here is the Hungarian sweet paprika. It’s a great source of antioxidants and antibacterial compounds. Traditionally, it’s used to treat sore throats, nasal bleeding, joint pain, and fevers.
Ingredients:
- 2 oz bacon
- 2 pounds beef stew meat
- 2 large onion
- 2 green bell peppers
- 2 red bell pepper
- 4 Tbsp tomato paste
- 1 1/2 Tbsp Hungarian sweet paprika (regular paprika works fine)
- 1/3 cup GFCF sour cream
- 1/2 cup water
Preparation:
- Dice bacon
- Chop onion and both bell peppers into 1-in pieces
- Cut beef stew meat into 1-in cubes
- On medium heat and uncovered, cook bacon in the pressure cooker for 4-5 min or until crisp
- Add chopped onion and cook for 1 min
- On medium heat, add beef and brown for 4-8 min, turning as needed
- Add bell peppers
- In a separate bowl, thoroughly mix 1/2 cup water, tomato paste and paprika
- Add to cooker
- Cover and bring to high pressure
- Once stabilized, pressure cook on lower setting for 10 minutes
- Carefully release pressure
- Season with salt and pepper to taste
- Add the sour cream and stir
- Makes 4-6 servings
Now if you don’t have a pressure cooker or want to use a regular pot or crock pot to slow cook:
Just fry the bacon, brown the meat, combine everything except the sour cream, and simmer for 3-5 hours. Finally season to taste, add the sour cream, and serve.
