In order to preserve nutrients in the food I am eating, I like to buy fresh, organic produce and do not cut them until I am ready to cook. I also use an ozonator to clean my produce after purchasing, and before cooking or eating. This method has been proven to remove harmful pesticides and microbes that may be present on the surface of the produce, and also preserves produce to keep them fresh for longer periods of time.
This recipe is a healthy dip that provides many nutrients and a surprising amount of flavor. It can be enjoyed with crackers, chips, vegetables, breads, and works great as a snack or appetizer. It’s easy to make and you can easily substitute vegetables or add spices for different tastes.

Ingredients:
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, seeded and sliced
- 1 red onion, thinly sliced
- 2 garlic cloves, peeled
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper, or to taste
Preparation:
- Preheat the oven to 400°F.
- Place the zucchini, squash, bell pepper, onion and garlic on a jelly-roll pan. Spray evenly with nonstick cooking spray; sprinkle evenly with the salt and cayenne.
- Bake, turning once, until the vegetables are tender and lightly browned, about 15 minutes on each side.
- Transfer the vegetables to a blender or food processor; puree.
- Transfer to a serving bowl and serve warm, or refrigerate, covered, until chilled, at least 2 hours.
This is by far the best roasted vegetable dip I’ve ever had. It’s a great appetizer for any meal and tastes phenomenal with gluten-free chips!
